El Pachis Comida Mexicana started with a simple conviction: if you're going to serve Mexican food in the Rio Grande Valley, it has to honor what came before. Not as performance — as practice.
Our tortillas are pressed to order. Our salsas are roasted over open flame. Our mole simmers longer than most people's lunch breaks. We don't cut corners because the people who eat here deserve to know exactly what they're getting.
